The Kiyoshi Kato 240mm wa-gyuto is made with aogami core steel and carbon cladding. The spine begins thick near the handle and tapers toward the tip, which gives the blade a steady and predictable feel during use. The blade has a convex grind that supports smooth food release and helps maintain stability through different cutting motions. The geometry is consistent along the length of the blade without being overly thin. The knife is fitted with an octagonal magnolia handle and a buffalo horn ferrule.
Kiyoshi Kato, also known by his smith name Yoshiaki Fujiwara, was born in 1944. He is a licensed swordsmith and received his certification in 1999. His training began at age 20 under his grandfather, Kanekuni Kato, and his father, Sanehira Kato. After more than ten years of swordsmithing, he began producing outdoor and kitchen knives in 1977. He continues to make his knives in his workshop in Hokuto City in Yamanashi prefecture.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
