The Tsunehisa nashiji SLD santoku is a handcrafted Japanese knife with a core of SLD steel from Hitachi. This semi-stainless steel contains 12% chromium, just shy of the 13% needed for full stainless classification. SLD steel provides good edge retention and reasonable toughness. The blade features a combination of tsuchime (hammered) and nashiji (pear skin) finishes, creating a distinctive textured appearance.

The santoku is a versatile kitchen knife designed for multiple cutting tasks. Its name, which means "three virtues" in Japanese, refers to its ability to handle meat, fish, and vegetables with equal proficiency. The broad blade and slightly curved cutting edge allow for efficient chopping, slicing, and mincing.   • Use a whetstone to maintain sharpness. Avoid electric sharpeners and pull-through sharpeners, as they are not suitable for Japanese kitchen knives. Honing rods, typically used for western-style knives, may potentially damage the edge.
