The Tetsujin tanryusen ginsan gyuto 210mm is a hand-forged Japanese chef's knife forged in Kochi by Toru Tamura and sharpened by Naohito Myojin. The ginsan stainless steel core sharpens quickly and responds well on the stone. Fitted with an octagonal mono ebony handle. A solid step up for those ready to move beyond their first Japanese knife, and a reliable daily driver for experienced cooks who prefer stainless.
