Sukenari Hamono, established in 1933, is a high-end professional knife manufacturer based in Toyama, Japan. This small forge is led by third-generation blacksmith Nobuo Hanaki-san. They are renowned for their ZDP189 and Shirogami #1 Honyaki knives, as well as their exceptional grinds and consistent heat-treatment.
What is a Kiritsuke? The traditional Kiritsuke knife is a cross between the Yanagiba and the Usuba, making it one of the few traditional multi-purpose Japanese-style knives. These sword-shaped knives feature a straighter edge than Yanagi knives for vegetables and a longer blade than Usuba knives for slicing fish. Traditionally, Kiritsuke knives were exclusively used by executive chefs as a status symbol due to their difficulty in use.
