The Sukenari HAP40 gyuto 210mm is a handcrafted Japanese chef's knife forged in Toyama by third-generation blacksmith Nobuo Hanaki. This knife features Hitachi HAP40 powdered steel in sanmai construction with stainless cladding and a migaki finish. HAP40 is one of the hardest alloys used in kitchen knives, heat treated to 68 HRC. The blade measures 202mm with 48.6mm height and weighs 167g.

Migaki finish can be easily scratched. Once you put the magnolia saya on, expect the blade face will have a few scratches.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
