The Sukenari damascus XEOS gyuto 240mm is a handcrafted Japanese chef's knife forged in Toyama by third-generation blacksmith Nobuo Hanaki. This stainless steel gyuto features an XEOS core in sanmai construction with stainless damascus cladding. XEOS is a new stainless steel from Takefu Special Steel Co., Ltd. that delivers an exceptional balance between edge retention and toughness. The fine microstructure makes it easy to sharpen. Heat treated to 61–62 HRC. The blade measures 230mm with 50.4mm height. This Japanese gyuto handles general kitchen tasks from slicing to chopping. The full stainless construction with high corrosion resistance makes it easy to maintain. A magnolia saya is included for storage and protection.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
