The Shigeki Tanaka R2 damascus gyuto 270mm is a handcrafted Japanese chef's knife made by Shigeki Tanaka in Miki, Japan. This gyuto knife has a damascus cladding over a core of R2 steel, which is known for holding its edge well and resisting corrosion. The handle is made from ironwood, which Tanaka-san uses for his top-of-the-line knives. The ironwood series is considered Tanaka-san's best work and is considered as a collector's piece. This knife comes in a traditional kiri wood box.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
