Handforged in Miki, Japan by Shigeki Tanaka, this gyuto features Aogami#2 carbon steel core with stainless cladding and migaki finish. The 241mm cutting edge delivers versatile performance for general kitchen tasks. Among Shigeki Tanaka gyutos, this workhorse version is one of our favorite lines. The entirety of the blade is convexed from spine to edge. It may not look particularly thin behind the edge but it actually cuts well and offers great food release--one of those examples where you shouldn't rely solely on choil shots. Perfect for fellow workhorse fans.
