The Shigeki Tanaka ktip santoku 165mm is a handcrafted Japanese kitchen knife forged in Miki by fourth-generation blacksmith Shigeki Tanaka. This knife features an Aogami#2 carbon steel core with iron cladding in sanmai construction and a kurouchi finish. At 165mm with a lightweight 110g profile, this ktip design combines the versatility of a santoku with the angled tip of a kiritsuke.
The Tanaka family has been forging knives in Miki City for over a century. Shigeki Tanaka is a fourth-generation blacksmith who trained in Takefu for three years before joining the family business in 1999. He works primarily with Aogami#2 carbon steel and VG10 stainless steel, both of which he heat treats with consistent precision developed through years of focused practice with these materials.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
