The Shigefusa kitaeji 330mm yanagiba is a single bevel knife designed for precise slicing of sushi and sashimi. It is made with a proprietary Swedish carbon steel core and reactive damascus iron cladding. The blade features the distinctive kitaeji pattern, which is created through layered forging and results in a unique damascus pattrern on every knife. The long, narrow profile supports clean, controlled cuts, and the geometry is shaped for smooth draw slicing. The knife is fitted with a D-shaped ho wood handle and a buffalo horn ferrule.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
