The Shigefusa kitaeji wa-gyuto 240mm is a handcrafted Japanese chef's knife forged in Sanjo. This knife features a proprietary Swedish carbon steel core with reactive damascus iron cladding. At 244mm with 50.9mm blade height and weighing 205g, this wa-gyuto handles general kitchen tasks from slicing to chopping. The iron cladding will develop a natural patina over time with use. Shigefusa knives are made in small batches and remain sought after by collectors.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
