The Nigara Hamono tsuchime damascus VG10 kiritsuke gyuto 210mm is a Japanese chef's knife handcrafted in Aomori by Nigara Hamono. This knife features a Takefu VG10 stainless steel core clad in stainless damascus with a tsuchime (hammered) finish. VG10 is a popular stainless steel that holds an edge well and resists rust.
The kiritsuke gyuto profile combines the flat edge of a kiritsuke with the versatility of a gyuto. At 179g for a ~200mm blade, it's light enough for agile work but substantial enough to feel solid. Being stainless, it won't rust with normal use and doesn't need the immediate care that carbon steel requires. Comes with an octagonal ebony handle. A solid choice for home cooks new to Japanese knives or professionals who prefer low-maintenance stainless.
