The Nigara aogami#2 + shirogami#2 coreless honyaki gyuto 300mm is a handcrafted Japanese chef's knife forged in Hirosaki, Aomori by eighth-generation blacksmith Yoshizawa-san of Nigara Hamono. This knife features a unique coreless honyaki construction made from multilayers of Aogami #2 and Shirogami #2 steel. The blade measures 300mm and displays an etched finish that reveals distinct steel layers and the hamon pattern. The full convex grind on the front and gentler convexity on the reverse ensure balanced cutting performance. This Japanese gyuto handles general kitchen tasks from slicing to chopping.

About the forge: Nigara Hamono has preserved the art of Japanese swordsmithing for 350 years across eight generations, originating as sword makers for the Tsugaru clan. Their legendary fifth-generation blacksmith, Kunitoshi Nigara, is celebrated as a national treasure. Eighth-generation blacksmith Tsuyoshi Yoshizawa continues the family tradition, crafting unique and innovative kitchen knives while upholding a legacy of exceptional craftsmanship.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
