This knife features an Aogami #1 carbon steel core with iron cladding in sanmai construction. The blade measures 196mm with 54.9mm height and weighs 162g. This bunka handles general kitchen tasks from slicing to chopping, with the angled tip providing access for detailed work. The blade is thin behind the edge without feeling delicate. The spine is chamfered and the choil is rounded for comfort during use. The iron cladding will develop a natural patina over time with use.
