The Nakagawa shirogami#3 honyaki kiritsuke gyuto is handcrafted by renowned blacksmith Satoshi Nakagawa. This exquisite knife is forged from shirogami#3 steel, known for its exceptional sharpness. The handle is made from octagonal walnut, offering a comfortable and secure grip, complementing the overall design and functionality of the knife. One of standout features is the knife's mirror finish on the hira, which contrasts well with the matte finish on the blade road.

The knife is sharpened and finished by Morihiro hamono. It is thin behind the edge with a subtle concave grind. The combination of Satoshi Nakagawa's blacksmithing skills with Morihiro hamono's sharpening results in a knife that is not only beautiful but also a high-performance cutter in the kitchen. This knife truly represents the craftsmanship and tradition of Japanese knife-making, making it a favorite among collectors and enthusiasts.

※ What is a honyaki? Honyaki (本焼) represents the pinnacle of traditional Japanese knife craftsmanship, deeply anchored in the application of Japanese swordsmithing traditions. These knives are crafted using techniques similar to those used for traditional nihonto (Japanese swords). Made from a single piece of steel, they undergo a differential heat treatment process. This complex method produces a blade with a resilient spine and a hard, sharp edge. The process of making honyaki knives is challenging and time-consuming, demanding a high degree of skill in temperature control and forging. There is a notable failure rate during production, often resulting in blade cracking or warping during the quenching process, particularly with water-quenched honyaki (mizu-honyaki). The combination of required expertise and the high failure rate contributes to the higher cost of honyaki knives relative to other types of kitchen knives.
