A minimalist custom gyuto forged by Satοshi Νakagawa. It has a core steel of aogami#1 which is a common choice for high-end Japanese kitchen knives. It is able to take a very fine edge and holds it for a long time. The excellent fit & finish and cross-sectional geometry is expected from the renowned Κawakιta hαmonο. We love the chamfered spine and the rounded choil. It's nicely convexed and thin behind the edge without feeling delicate---just the right amount of thinness and edge flex; a rather robust edge that doesn't sacrifice cutting ability.
The balance is perfect on the gyuto and despite the extra height, it doesn't feel big at all. We hope that this first batch of our custom Nakagawa will be your new favorite!
