The Nakagawa aogami#1 tall gyuto 240mm is a handcrafted Japanese chef's knife forged in Sakai by Satoshi Nakagawa and sharpened by Kawakita Hamono. This knife features an Aogami #1 carbon steel core with iron cladding in sanmai construction. The blade measures 227mm with 57.1mm height and weighs 195g. This tall gyuto handles general kitchen tasks from slicing to chopping. Despite the extra height, the knife feels well-balanced in hand. The blade is thin behind the edge without feeling delicate. The spine is chamfered and the choil is rounded for comfort during use. The iron cladding will develop a natural patina over time with use.
