The Nakagawa bokashi shirogami#1 gyuto is forged by blacksmith Satoshi Nakagawa. Just like our previous Nakagawa aogami#1 custom, we opted for the same bokashi finish for that minimalist look. It has shirogami#1 as its core steel, known for its purity and ability to achieve the highest sharpness among carbon steels. With its fine grain structure, this steel sharpens easily, can hold refined edges well, and can take very acute angles. The blade boasts a convex grind and is notably thin behind the edge, with just the right amount of flex, ensuring optimal cutting performance without feeling overly delicate. The sharpener for this batch is undisclosed.
