Specifications

Zahocho Custom (2023)

The Nakagawa Bokashi Shirogami #1 Gyuto is forged by blacksmith Satoshi Nakagawa. Just like our previous Nakagawa Aogami #1 custom, we opted for the same bokashi finish for a minimalist aesthetic. The core steel is Shirogami #1, prized for its purity and ability to achieve the highest sharpness among carbon steels. With its fine grain structure, this steel sharpens easily, holds refined edges well, and allows for very acute angles.

The blade boasts a convex grind and is notably thin behind the edge, with just the right amount of flex—ensuring optimal cutting performance without feeling overly delicate. The sharpener for this batch is undisclosed.
