The Mutsumi Hinoura kurouchi nashiji aogami super nakiri 170mm is a hand-forged Japanese vegetable knife made in Sanjo by Mutsumi Hinoura, a fourth-generation blacksmith who handles every step from forging to finishing. The nakiri excels at chopping and push-cutting vegetables. It features an Aogami Super (a carbon steel from Hitachi known for exceptional edge retention) core with stainless cladding, keeping day-to-day maintenance straightforward. The carbon core will develop a patina over time with regular use.

This nakiri has satisfying heft and presence in hand. Sanjo knives are known for their heftier builds, and this one cuts with that same confidence. An excellent nakiri for those looking for a significant upgrade, and a worthy addition for enthusiasts already familiar with Hinoura's work.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
