The Mutsumi Hinoura kurouchi nashiji Aogami Super nakiri 170mm is a hand-forged Japanese vegetable knife made in Sanjo by Mutsumi Hinoura, a fourth-generation blacksmith who handles every step from forging to finishing and sharpening. The nakiri's flat profile excels at chopping and push-cutting vegetables. This nakiri features an Aogami Super (Blue Super) carbon steel core with stainless cladding. The AS core delivers excellent edge retention while the stainless cladding keeps day-to-day maintenance simple.
At 208g for a 170mm blade, it has satisfying heft and presence in hand. Paired with an octagonal ebony handle with pakka wood ferrule. Suitable for right- and left-handed users. An excellent nakiri for those looking for a significant upgrade, and a worthy addition for enthusiasts already familiar with Hinoura's work.
About the blacksmith: Mutsumi Hinoura, born in 1981, is a fourth-generation blacksmith from Sanjo who trained under his father Tsukasa Hinoura. Since 2001, he has specialized in traditional Japanese forging techniques, crafting hatchets, hunting knives, and kitchen knives. In 2025, he established his own independent workshop.
