A 210mm yo-gyuto from Masamoto Sohonten's VG series. It is a monosteel blade made of Masamoto's "Hyper molybdenum vanadium" stainless steel. It's the perfect workhorse if you're looking for a stainless steel blade that has a good balance of toughness and edge retention. It features a full tang construction with Duracon handle scales, a durable thermoplastic resin that is anti-bacterial.
A gyuto, or the Japanese chef's knife, is designed for versatile cutting tasks. Its purpose is to excel at slicing, dicing, and chopping various ingredients with precision and ease.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
