Crafted by Masamoto Sohonten, this kiritsuke sujihiki is made from MV stainless steel with a migaki finish. The knife comes with a D-shaped magnolia handle. This is a laser-type knife, ensuring effortless cutting thanks to its thin cross-sectional geometry. It is ground with some convexity for better food release. With its lightweight construction, this sujihiki knife can be used for long periods of time.
