Crafted by Masamoto Sohonten, this kiritsuke sujihiki is made from MV stainless steel with a migaki finish. The knife comes with a D-shaped magnolia handle. This is a laser type of knife ensuring effortless cutting thanks to its thin cross-sectional geometry. It is ground with some convexity for better food release. With its lightweight construction, this sujihiki knife can be used for long periods of time. The kiritsuke sujihiki is primarily designed for precise slicing of meat and fish, offering clean, long cuts with minimal effort.
