Masahiro is another solid Japanese knife-maker from Seki, Japan. Along with Misono and Masamoto, they are recognized as the big three M's.

Established in 1948, the company has been providing great value knives for both professional chefs and home cooks. Masahiro continues to improve their products by focusing on the research and development of their processing technology and the improvement of materials.

What is a funayuki?

The funayuki's original function was to serve as a multipurpose knife for fishing boats. The manner in which a knife maker today designs and markets their knives will determine how the phrase is utilized. A generally flat blade profile with a small belly and a short, practical size are two characteristics that are shared by all funayukis. Similar to the equally versatile gyuto and santoku, a funayuki can also be used to cut meat, vegetables, and fruit. 

Compared to a santoku, funayuki has a pointier and more agile tip. One can consider funayuki as simply a smaller version of a gyuto.

  • Avoid using the knife to cut through bones or frozen foods. It's best to use a separate knife specifically designed for these tasks.

  • When cutting, use a smooth and fluid motion, avoid twisting or torquing the blade. This technique helps maintain control and minimizes the risk of damage.

  • Never put Japanese kitchen knives in the dishwasher. Instead, hand wash them with mild soap, ensuring thorough cleaning, and then dry them completely before storing.
