Shindo-san is a young blacksmith based in Tosa, Japan. After training for 8 years, he opened his own forge in May 2020. His knives have a very thin grind and nice distal taper. If you're looking for an inexpensive carbon steel gyuto knife that performs really well, this should be your top pick.
