The Ittosai Kotetsu ktip gyuto 212mm is a Japanese chef's knife made in Tosa City, Kochi. This knife features an Aogami Super carbon steel core with stainless cladding in sanmai construction. The blade measures 212mm with 45.2mm height and weighs 206g. The ktip (kiritsuke) design adds an angled tip to the gyuto profile. The stainless cladding over the carbon core reduces maintenance while keeping the edge-holding qualities of Aogami Super steel.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
