This is a beautifully rustic gyuto knife from Mutsumi Hinoura. It has a core steel of shirogami#2 with soft iron clad (full of banding). The balance point is around the first kanji. This knife is thick and thin at the right places: thick at the spine (4.8mm) and very thin behind the edge; it's a nail-flexer. Combine that with its low bevel, you get a knife that cuts well with good food release.
