Specifications
Hand-forged in Sanjo, Japan by Mutsumi Hinoura, this hakata features an Aogami Super carbon steel core clad in stainless steel with a kurouchi nashiji finish. The stainless cladding reduces maintenance concerns while the kurouchi nashiji finish gives the blade a rustic, traditional aesthetic. This hakata has satisfying heft and presence in hand for everyday cutting tasks, while the pointed tip allows for precision work.
A hakata is a regional variation of the bunka, serving as a versatile multipurpose knife. Less common than the bunka, it offers a distinctive profile for cooks seeking something different without sacrificing practicality.

Recently, Mutsumi established his own independent workshop, continuing the Hinoura family's legacy of fine craftsmanship.
