The Hatsukokoro aogami#1 yanagiba 300mm is a handcrafted Japanese sushi knife forged in Sakai by Satoshi Nakagawa and sharpened by Morihiro Hamono. This single-bevel knife features Hitachi Aogami #1 carbon steel core with iron cladding in nimai construction and a mirror finish on the hira. This yanagiba is designed for slicing fish for sushi and sashimi. The iron cladding will develop a natural patina over time with use.
