The Hatsukokoro x Miyazaki ATS-34 damascus kiritsuke gyuto is a handcrafted Japanese kitchen knife by Haruyuki Miyazaki for the Hatsukokoro brand. The core steel is Hitachi ATS-34, also known as the Japanese version of the premium 154CM stainless steel developed by Crucible in the 1970s for industrial applications before being adopted for high-end cutlery.
ATS34 offers excellent edge retention and overall toughness while still allowing very sharp, fine edges to be achieved, though it can be a bit stubborn to sharpen compared to some other steels. This well-balanced steel is ideal for kitchen knives that see frequent use. The combination of the high-performance ATS34 core with the striking damascus cladding creates a functional yet beautifully crafted kitchen knife.
