The Hatsukokoro x Miyazaki ATS-34 damascus kiritsuke gyuto 220mm is a hand-forged Japanese chef's knife made in Nagasaki by Haruki Miyazaki for the Hatsukokoro brand. The blade has an ATS-34 stainless steel core clad in damascus. ATS-34 is the Japanese equivalent of 154CM, known for excellent edge retention and overall toughness while still taking a very fine edge. Fitted with an octagonal mono ebony handle.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
