The core steel is shirogami#2, known for its exceptional sharpness and ease of sharpening. Unlike more common double bevel gyutos, the single bevel design requires more skill and practice to master. This knife is well-suited for precise cutting tasks and creating beautiful, clean slices. At 180mm in length, it is a compact and maneuverable option.
