Handforged in Tosa, Japan by Toru Tamura of Tetsujin Hamono and sharpened by Myojin Riki Seisakusho, this 165mm deba has a shirogami #2 core with iron cladding. A deba is a thick-spined, single-bevel knife designed for breaking down whole fish -- heavy and thick enough to split through bone, precise enough to fillet. Shirogami #2 takes a keen edge and sharpens easily on stones. A specialist knife for cooks who work with whole fish and want a traditional Japanese tool for the job.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
