The Hatsukokoro Shinkiro kurouchi damascus gyuto 240mm is a Japanese chef's knife hand-forged in Fukushima by Takahiro Nihei. This gyuto features an Aogami Super (Blue Super) carbon steel core clad in iron damascus with a kurouchi finish. Aogami Super is a carbon steel known for excellent edge retention. It stays sharp longer than standard blue or white steels. Despite the hardness, Nihei-san's AS is very easy to sharpen.

The iron damascus cladding will develop a natural patina over time with regular use, giving each knife a unique appearance. At 251g, this is a hefty knife with substantial feel in hand. Fitted with an octagonal ebony handle. An excellent gyuto for those taking a significant step up from their first Japanese knife, and a worthy addition for enthusiasts already familiar with Nihei's work.
