The Hatsukokoro Ryuhyo bunka 180mm is a Japanese kitchen knife handcrafted in Seki for the Hatsukokoro brand. This bunka features an SG2 powdered stainless steel core by Takefu Special Steel, clad in damascus with a mirror finish. The pointed tip allows for detail work like scoring and intricate cuts.

SG2 is a premium powdered stainless steel with exceptional edge retention--it stays sharp longer than most stainless steels while still sharpening easily when needed. Being stainless, it won't rust with normal use and doesn't require the immediate maintenance that carbon steel does. At 125g, it's light and nimble in hand, well-suited for extended prep sessions. Paired with an octagonal olive wood handle. A solid choice for home cooks new to Japanese knives or professionals who prefer low-maintenance stainless knife.
