Specifications
A Kiritsuke Gyuto handcrafted by Satoshi Nakagawa for the Hatsukokoro brand. The blade features a Ginsan core steel and is sharpened by Morihiro Hamono, showcasing a subtle concave grind with excellent edge flex. Paired with an octagonal ebony handle with a black horn ferrule, this knife delivers both refined aesthetics and superior functionality.
Ginsan, or Silver #3 by Hitachi, is a stainless steel known for its sharpening ease similar to carbon steel—often referred to as "stainless Shirogami." This steel takes a keen edge while offering relatively good edge retention. If you're looking for a stainless option, Nakagawa’s Ginsan gyuto is an outstanding choice—his craftsmanship with this steel is among the best.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
