A kiritsuke gyuto handcrafted by Satoshi Nakagawa for the Hatsukokoro brand. The blade features a ginsan core steel and is sharpened by Morihiro Hamono, showcasing a subtle concave grind with some nice edge flex. The blade is paired with an octagonal ebony handle with black horn ferrule.

Our favorite stainless steel, Ginsan or Silver#3 by Hitachi, offers the ease of sharpening akin to carbon steel, which is why it's often referred to as the "stainless shirogami." This steel also takes a very keen edge with relatively good edge retention. If you're looking for a stainless option, you can't go wrong with this Nakagawa-forged gyuto; his ginsan is one of the best out there.
