The Hatsukokoro Kurokaze kurouchi shirogami#2 tall gyuto 210mm is a handcrafted Japanese chef's knife from Kochi. This carbon steel gyuto features a Shirogami #2 core in sanmai construction with stainless cladding and a rustic kurouchi finish. Shirogami #2 is a fine-grained carbon steel known for its ease of sharpening and ability to take a razor-sharp edge. Heat treated to 61–62 HRC. The blade measures 213mm with 52.5mm height. The relatively tall design ensures ample knuckle clearance for comfortable use. This Japanese gyuto handles general kitchen tasks from slicing to chopping. The stainless cladding over the carbon core reduces maintenance requirements.
