The carbon steel core, shirogami#2, is sandwiched between two layers of stainless steel ("stainless clad") making maintenance easy. At 180mm, the blade is ideal for both quick tasks and small jobs, making it a preferred choice for home cooks as well as professionals. The polished spine and choil ensure comfortable handling during use.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
