This carbon steel petty features an Aogami #2 core in sanmai construction with stainless cladding and copper damascus. Aogami #2 offers a balanced combination of sharpness, edge retention, and toughness. Heat treated to 62–63 HRC. The blade measures 150mm with 30mm height. This petty knife handles precision work like peeling, trimming, and slicing small ingredients. The copper damascus cladding provides both aesthetic appeal and functional performance. The stainless cladding over the carbon core reduces maintenance requirements.
