The 'Habayusa rainbow damascus' series is a new line from Hatsukokoro. It has aogami#2 core steel at its core, renowned for its balanced combination of edge retention, sharpness, and toughness. Adorned with an exquisite copper damascus cladding and complemented by stainless cladding, this knife not only boasts impressive aesthetics but also ensures easy maintenance, ideal for beginners. The octagonal teak wood handle provides a firm and comfortable grasp, elevating the cutting experience. ※ This knife is stainless clad: Stainless clad is a sanmai or warikomi construction where the carbon steel core (e.g. shirogami#2, aogami#2, AS, etc) is sandwiched between outer layers of stainless steel (see last image). The stainless cladding (the "jacket") makes the knife much easier to care for. The key advantage of stainless clad knives is that the stainless outer layers protect the reactive carbon steel core from corrosion and patina formation. This makes maintenance much simpler compared to monosteel carbon or iron clad knives.
Note on Forced Patina: Most customers are requesting to force a patina on stainless clad knives, just like this Hatsukokoro rainbow damascus gyuto. It's an easy process that anyone can do.
