Collection: Anryu
Anryu Hamono, now led by Takumi Ikeda, is a traditional knife workshop in Takefu Knife Village, Echizen. The workshop, previously headed by certified Echizen Traditional Craftsman Katsushige Anryu, transitioned to Ikeda's leadership in January 2021. Under Ikeda's direction, the workshop continues producing Japanese kitchen knives including gyuto, santoku, bunka, and petty styles, crafted primarily with Aogami (Blue #2) and Shirogami (White #2) carbon steels. Their knives feature traditional finishes such as tsuchime (hammered) and nashiji (pear skin) patterns, combining Echizen forging methods with practical designs for professional and home kitchens.
