Shingen (信玄), another ZKT original, is our new brand in partnership with Tadafusa.
Tadafusa, founded in 1948, is a small Sanjo-based knife maker that has won various awards such as the Good-Design Award and Good Design Award of Small and Medium Enterprise. They never stop making great efforts to create knives based on the changing needs of users.
What we love about their knives is that they're of high quality and are well-priced. When choosing knives, we usually consider craftsmanship, aesthetics, performance, and value. Tadafusa knives have all of these qualities. This is one of the reasons why we chose them for our new brand, Shingen (信玄).
Whether you're a home cook, a kitchen knife enthusiast, or a professional chef, you will surely love these knives. The Hitachi aogami#2 core steel is one of the best for kitchen knives. It has great edge retention and has better corrosion resistance compared to a shirogami steel (but will still rust if left wet). The stainless cladding makes maintenance easier.
You get the best of both worlds: ease of maintenance and the sharpness of a carbon steel thanks to its aogami#2 core. We also requested a special handle for this. It's an urushi lacquer burned oak wood. This wood has a nice grain and not overly decorative which we really like. As a knife handle, it is incredibly tough and durable. Pure urushi was used resulting in that transparent film protecting the handle.
